Restaurant and pastry house Bystro opens in Dubai

Venue specialises in Tuscan pastries; has GCC and Asia expansion plans

Restaurant and pastry house Bystro has opened in Dubai's Al Manara area, offering a modern European culinary experience and specialising in typical Tuscan pastries.

The brand was founded by Josh Benson, who was previously operations manager at Maison Bagatelle. He said: "It all goes back to one point: wanting to service the Dubai market with an authentic product."


He continued: "I have been out here long enough, and as someone who is very much involved in the food and beverage industry, I know what is reasonable and what is acceptable; if you cannot deliver a real product, at the best that it could be, then stay away."

Explaining the concept of the venue, Benson said the type of food and service provided is similar to 'bistro' style.

Some dishes on offer include beetroot hummus, Sicilian tuna and piccalilli salad, fresh cut rump steak, pan fried cod fillet and aubergine melenzane.

Benson added: "We pride ourselves with our Josper charcoal grill, an appliance used in some of the best kitchens all over the world. I only know one other non-licensed restaurant in the UAE using this type of oven. It will be used for all vegetable and meat dishes where any oven work is required. This method offers our guests with a dish that holds the perfect texture, as well as the correct amount of juiciness."

"I have invested in equipment, people and technique to try and achieve this," he concluded. "And, with my motto of putting 'product before profit', I aim to introduce a genuine experience to my guests and hopefully roll out the concept across parts of the GCC, possibly Asia."
