Dubai-based Italian restaurant BiCE Mare is part of an internship programme that allows student chefs to work in an F&B environment for six months and trains them to enter the culinary industry.

Italian Restaurant Consulting's (IRC) International Internship Programme provides contracted hotels and restaurants with Italian culinary and hospitality junior professionals for a period of internship of between three and six months. The junior professionals are selected from top Italian hotel schools, as well as from restaurants, and must pass a selection test that follows a short training.

While Dubai’s venue has not had any students as part of this programme yet, BiCE Mare executive chef Francesco Guarracino said this initiative is very important to the brand.

He told Caterer Middle East: “This internship is very important for BiCE Mare as it gives us the opportunity to hire a motivated, professional and talented chef, for a six month period, who has been trained at one of the best Italian culinary schools.”

Guarracino added: “And on the other hand these young chefs will have the opportunity to work abroad in Dubai in one of the most successful Italian restaurant chains around the world, working on a daily basis with prime ingredients and modern techniques.”

The internship programme is offered to hospitality organisations outside Italy and is open to four- and five-star hotels with an Italian restaurant on their premises, as well as independent Italian restaurants with a high standard of quality. The interns can be chefs, pastry chefs, waiters and waitresses, restaurant managers, and bartenders, and must be between 18 and 25 years of age.
