Royal Rose Hotel's Barocco gets new head chef

City Seasons Hotels' flagship property Royal Rose has appointed Thierry Gallas as head chef for its newly opened Mediterranean restaurant, Barocco.

Specialising is pastries, Gallas has 18 years' experience, having worked in restaurants in France, England and the USA before joining another 5-star property in the capital.

At Barocco, Gallas will head the team of chefs to offer Mediterranean fare spanning specialties from Greece, Italy, Spain, Marocco, Turkey and France.

“We are so pleased to have Thierry Gallas on our team’, said Gianni Malerba, general manager of the hotel.

“He is young, dynamic and very enthusiastic about great food, this will definitely help introduce Barocco with style, in the very competitive capital’s market. Barocco is a refined Mediterranean restaurant with a fresh and original menu that we believe will delight food lovers,” he added.

Barocco is the latest restaurant to open  at Royal Rose Abu Dhabi. Decorated in Baroque style, it is located on the upper lobby level and overlooks the Versailles-style reception area.
