What makes Matto special in comparison to its competitors in the market?

Christian Carrieri: One of Matto’s key pillars is to bring the essence of real Italian hospitality to Dubai. We are an Italian brand at our core and this is evident in our food, our décor, our staff and our ambiance.

Mario Olimpio: We want our guests to have an experience that is as authentic as possible. When people visit the restaurant, we want them to relax, sit back and really feel like they are in Italian surroundings.


How do the front-of-house and back-of-house teams support each other?

Christian Carrieri: We ensure that all the teams start and end the day with the right mindset, ensure people work well together and most of all, encourage our staff to be passionate about their roles. Despite the diverse mix of personalities and backgrounds, the team is a family.

Mario Olimpio: We work together to achieve one goal. Matto was a dream for most of us and this is reflected to our guests as well. As a team, it is imperative that we are all connected have the right synergy and work as one unit. This is the ultimate formula to ensure success.

How do you ensure the outlet is busy and profitable?

Christian Carrieri: We ensure that we are an outlet that can service any kind of occasion and our price point positioning makes us a restaurant you can visit multiple times a week if you are craving great Italian food.

Mario Olimpio: Profitability is related to good control on your expenses as everyone is productive in the venue and we prefer to work with smaller margins and high turnovers.

What are the biggest business challenges you face?

Christian Carrieri: As a city, Dubai has a lot to offer in terms of restaurants; however, we can see that the current trend is going back to the basics which is the essence of hospitality and at the end of the day, we want people to feel at home when they visit Matto.

Mario Olimpio: So far, our biggest challenge is to improve everyday and achieve new personal targets. In addition to this, we are working on building a solid customer base as people share their experiences and spread positive feedback from their visits.

What does the future hold for Matto in the region?

Christian Carrieri: We will continue to ensure our guests are served the best in Italian cuisine, in the most hospitable environment, and hope that they come back to us again and again.

Mario Olimpio: We have a lot of exciting things planned for the brand in the region so stay tuned and expect some announcements soon because this is just the beginning.
