JW Marriott's Cucina bags authenticity recognition
The Cucina restaurant at the JW Marriott Dubai has been selected as one of only three Italian restaurants in the UAE to receive the Certification of Hospitality from the Italian Chamber of Commerce in the UAE.
The Italian Chamber of Commerce in the UAE presented the certification to Cucina because of the restaurant’s “great initiative to use original and quality Italian products” and giving recognition to increase the value of the Italian image.
Hotel general manager Wael Soueid said the hotel was “honoured to receive this certification”.
“Cucina was opened since the inception of this hotel in 1998 and is famous for its friendly casual atmosphere combined with its originality, cooking methods, traditional recipes and flavours,” Soueid said.
“The menu itself is the ‘star’ of the restaurant and diners are welcomed by the fragrance of olive oil, tomatoes and cheese. Our Italian Chef, Andrea de Conte, who is also the Executive Sous Chef, has indeed played a pivotal role in maintaining its high standards by using only the best ingredients from Italy.”
The certification project, ‘Ospitalita Italiana, Ristoranti Italiani nel Mondo” (Italian Hositality, Italian Restaurants in the World), began in 2007 with the goal to have 1000 Italian restaurant around the world being certified.
In order to be certified as a traditional Italian restaurant, criteria has to be met, including the menu has to be correctly spelt in Italian; and the ambience has to have many elements of Italian origins from furniture to décor.
Furthermore, the menu has to have the description of at least five traditional Italian recipes; the head chef must have qualifications and experience in preparing Italian dishes; an Italian speaking staff in the restaurant; only Italian virgin oil is provided on the table and the wine list must at least have 20% Italian wines.
