Cake walk for Jade Saducas to Pastry Chef award

At the Caterer Middle East Awards 2018, Madinat Jumeirah's cake artist wins top marks for her work

Madinat Jumeirah's Jade Saducas was heralded as the 2018 Pastry Chef of the Year at the Caterer Middle East Awards on May 9, 2018.

EMF Emirates general manager Pierre Feghali presented the award to Saducas, who beat out tough competition from five other pastry chefs in the region. Raffles Dubai's Wolfgang Wagenleitner was highly commended in this category.


As resort cake artist at Madinat Jumeirah, Saducas oversees its speciality cakes division across four hotels, conference and incentive events unit, Jumeirah Restaurant Group and Jumeirah Hospitality. She joined the resort in 2013 from Atlantis, The Palm, Dubai. A former cake-shop owner, she attended the Philippines’ International Culinary Arts Academy and gained a Masters in Cake Decorating from the School of Culinary, Baking and Pastry Arts. She also obtained a diploma from Malaysia’s Academy of Pastry Arts, Callebaut Chocolate Academy and Richemont Masterbaker.

Saducas was referred to as a craftsperson by the judges who appreciated her dedication to the art of pastry. She is somewhat of a social media influencer in the world of pastry, and has represented the UAE at international competitions - and won. Just as one example, in 2017, Saducas scooped the top prize of the World Cake Designer Championships in Milan, Italy. Talking about her competitive experiences, Saducas told Caterer Middle East: "Preparing for international competitions isn’t easy, especially if you want to win gold. You have to be ready to sacrifice, which means less sleep, patience and focus. Preparing for competitions involves five to six months of rigorous training.

"All of us [at Jumeirah] are given equal opportunities to go into a competition and it’s up to each individual if they want to win gold or otherwise."

With a number of loyal customers and glowing testimonials, her awards entry also featured a recommendation from the highest authority: the F&B team for His Highness Sheikh Mohammed bin Rashid Al Maktoum. Saducas is very humble, and commented: "For instance, when I read all the testimonials from all my customers it moves me. It’s like they feel it in the product I put in front of them. I consider myself an artist and always want to give more than 100% in terms of my creativity."
