Pai Thai's chef lauded at Caterer Middle East Awards 2018
At the Caterer Middle East Awards 2018, Aphichat Amatmontri from Pai Thai won the title of Head Chef of the Year – Standalone Restaurant.
Amatmontri joined Pai Thai in 2010 as a sous chef. He was promoted to chef de cuisine and head chef just one year later. Amatmontri works on bi-yearly menu updates and specialised dinner experiences, and has seen a revenue increase of 9% during the last year. He also implemented several techniques to ensure the venue’s operation is profitable, and staff turnover has been 0% over the last 12 months.
Speaking to Caterer Middle East after picking up his trophy, Amatmontri said: "For me the main thing is the team and the kitchen. We believe in giving our best to our guests because when we offer high quality products to them, they will come back for more."
He also had advice for entrants to the industry: "I want advise young chefs to rise up to the occasion and concentrate wholeheartedly on what they are doing. And to the chefs I manage, I want them to grow and become head chefs someday; this is my only desire for them."
Presented to Amatmontri by Bragard director Middle East Fabien Firetto, this head chef fought off competition from five other head chefs in the region.
Luigi Vespero from Galvin Dubai & Demoiselle by Galvin won the highly commended nod, not just for his work but also his overall involvement in the wider F&B community.
