Paolo Gramaglia, executive chef of the Michelin-starred President restaurant in Pompeii, Naples is bringing a special vegan menu to two Dubai restaurants for three days at the end of March.
Gramaglia will bring his take on a plant-based Italian meal to Bice Ristorante at Hilton Dubai Jumeirah on March 27 and 28 , before moving north to Table 9 at Hilton Dubai Creek on March 29.
Diners can expect to start with a small plate of green asparagus, white asparagus, baby corn and tofu, popcorn, lemon gel, and foam of lemon.
The main course is a pasta dish prepared with paccheri pasta bronzed down with three variations of tomatoes from the San Marzano tomato juice and basic flavoured red corbarino tomato, to a yellow datterino tomato confit, garnished with bruschetta foam, thyme and oregano.
Dinner ends on vegan tiramisu with the classic dessert made with coconut milk and vegetable sable.
It’s priced at AED250 dirhams and will only be available for those three days.
