Waldorf Astoria Dubai Palm Jumeirah has appointed Sandro Falbo as executive chef.
Falbo brings with him extensive experience in the luxury hospitality industry along with an extensive skill-set gained from a worldwide career spanning over 35 years.
The Italian national will be responsible for managing all culinary operational aspects of the hotel’s six restaurants and bars, including Peacock Alley tea lounge; all day dining venue Mezzerie and two signature restaurants — contemporary Italian concept, Social by Heinz Beck, and LAO, a Southeast Asian restaurant offering a modern twist on traditional Vietnamese fare.
Drawing from his wealth of expertise and global experience, Falbo will be responsible for developing and evolving the menus and dining concepts, hiring and training team members, as well as ensuring the hotel continues to provide unrivalled service.
Commenting on his appointment, Falbo said: “I’m thrilled to be joining the team here at the prestigious Waldorf Astoria Dubai Palm Jumeirah. I always say that I am not a chef, but a storyteller, I am excited to work across the exciting mix of dining establishments at the hotel, and to continue to create memorable and authentic dining experiences on one of the most iconic locations in the world.”
Waldorf Astoria Dubai Palm Jumeirah general manager David Wilson commented: “We are proud to work with some of the most talented chefs in the industry and Chef Falbo is no exception. With his wealth of international experience across the luxury hotel industry and genuine passion, we are confident that he will continue to elevate our culinary proposition, taking it to a new level of excellence.”
