Trader Vic's Hilton Dubai Jumeirah appoints general manager
Nicolas Rey has been appointed as general manager of the Trader Vic’s Hilton Dubai Jumeirah.
Born in the southeast of France, Rey grew up in the Netherlands and found his passion for hospitality helping out his mother in their family bakery.
He graduated from International Hotel Management School NHTV in Breda and started his career as a bar manager working at events and food fairs in Paris.
At 21, he was awarded first place at the first Young Hotelier Summit at Ecole hôtelière de Lausanne, Switzerland where he co-designed a new hospitality concept and was invited to Dubai to showcase his idea. After working in The Netherlands and France, he took a step to join Trader Vic’s Worldwide, USA in June 2014 where he was appointed assistant restaurant manager. He was in the role for six months before relocating with the brand to the Middle East.
Joining Beach Rotana Hotel in Abu Dhabi, Rey was promoted to general manager of Trader Vic’s where he worked on training and developing the new team. Since then, he has worked with the opening team of Trader Vic’s, Bangkok, Thailand taking on sole responsibility of taskforce.
He now has more than 15 years of experience in the hospitality industry, covering different fields such as F&B, training and development and quality management.
