7.30am: I wake up, get ready and make my way downstairs to our offices. I actually run several companies so living and working in the same building allows me to be more efficient.
8am: I hold my daily morning briefing across all companies and see what fires I need to fight during the day. I’m obsessed with attention to detail so there’s always something that needs to be changed or improved.
10am: I head to The Dry Age Boutique for a task force meeting with the employees. This is where we need to address any pending issues. I’m German so everything needs to be perfect, from the lighting, to the height of the counters to the specific stain used for the wooden table in our tasting room.
The first dry-aged meat of the day
12.30pm: For lunch, I grab a quick salad and a dry-aged beef carpaccio. I continuously taste the product to make sure that what we’re offering is of quality. I would never sell something that I wouldn’t eat.
2pm: I head to a shoot. I’ve always worked with industry leaders across the world throughout my career so for The Dry Age Boutique we’ve been able to align ourselves with respected chefs who recognise the passion that goes into the products that we serve.
5.30pm: I head back to the office to jump on a quick Zoom call with my New York-based associates. We’ve already had quite a bit of interest for The Dry Age Boutique concept in the US and we’re currently looking at locations.
Looking after myself
6pm: I have my class at Barry’s Boot Camp. Taking some time to work out during the day and look after my body really allows me to achieve balance. It’s so important.
7pm: I head to the spa at Burj Al Arab. This allows me to unwind and completely switch off.
9pm: I head to the home of one of my private clients. A few of my clients will contact me whenever they need a special cut of meat and I’ll happily arrange it for them. I’ve managed to build a really strong rapport with my clientele and many of them have become dear friends.
11pm: I head home and jump on a call with my family. I like to stay connected with how things are going back home so I’ll also watch the news as I relax and get ready for bed.
Midnight: Bedtime.
